Combine granulated sugar, non-fat dry milk powder, and xanthan gum in a large microwave-safe bowl and whisk until evenly distributed.

Gradually whisk in whole milk, heavy cream, and vanilla extract into the dry mixture. Microwave for 45 seconds. Whisk again until sugar dissolves and mixture is very smooth.

Pour the prepared vanilla soft serve base into a storage container (such as a Swirl Pint), seal, and freeze for 24 hours until fully set.
